HOTEL DEREK INTRODUCES NEW RESTAURANT CONCEPT: REVOLVE KITCHEN + BAR
Flexible, Modern Design Gives Revolve A New Look And Purpose For Each Meal Period
HOUSTON, Texas — July 15, 2014 — With a new restaurant concept as cool and hip as the recently renovated hotel itself, Hotel Derek, by Destination Hotels & Resorts, is rolling out the final phase of its rebranding with the introduction of Revolve Kitchen + Bar. The restaurant will serve hotel guests and locals with an edgy and fun twist on traditional hotel dining in a space that evolves throughout the day. Revolve is helmed by Hotel Derek’s Executive Chef Shannen Tune.
“We’ve saved the best of our multi-million dollar design renovation and rebranding for last,” says Shawn Gracey, managing director of Hotel Derek. “In speaking with our savvy, jet-setting guests and taking a serious look at what our culinary marketplace has to offer, we’re eager to introduce what we feel has been missing — and we’ve realized it’s not just one thing. It’s something that changes and adapts to the time of day. There’s no need for staunchly, white glove service at breakfast, lunch and dinner, so we’re going in a vastly different direction – no surprise there with Hotel Derek!”
Playing off the bold colors and Texas-chic vibe of the new Hotel Derek, Revolve is accented with bright purples, deep reds, glossy black lacquer and touches of designer cow print textures. The atmosphere and cuisine let guests know they are in Texas — but Houston, Texas. A cosmopolitan place that is inviting, approachable and someplace you’ll want to hang your hat for awhile.
Revolve opens each day for breakfast with two options — a Starbucks coffee bar for people on the go and then a Texas-inspired breakfast featuring rich Southern dishes like Huevos Rancheros served in cast iron skillet or an a’ la carte menu for those power breakfast types that serves up specialties including the Cattle Barron and Lady Bird omelet, as well as Chef Tune’s haute homestyle favorites — Steak & Eggs, Pecan Raisin French Toast and a Paris Texas Benedict.
As the lunch hour approaches, areas of Revolve transform into impromptu meeting spaces, complete with high tech touches including televisions that are equipped to show presentations, surf the web or morph into a competitive game of Wii tennis, “whatever it takes to get the creative juices flowing, says Gracey.” Lunch guests will indulge in more of Chef Tune’s signature style of taking archetypal foods and elevating them with fun twists of the unexpected, such as the famous Bacon-wrapped Grilled Cheese, Hangover Burger stacked high with a fried egg, bacon and hash browns and the most divine Lobster Potpie.
When the sun sets over H-town the mood and decor are amped up inside – this space lives up to its name, Revolve. New signage descends from the ceiling, turning the AM coffee bar into Tap & Pour, a pop-up bar serving 10 rotating craft beers on tap. Center stage of Revolve is the horseshoe shaped bar that crafts trendsetting cocktails, local and international beers and some of the finest wines by the glass – courtesy of the newly appointed wine cuvenee preservation technology. The social scene unveils itself when the designer clad staff reveal two sleek and sexy black-lacquer pool tables coated in royal purple felt, giving guests something new to absorb with a very Hotel Derek kind of vibe.
Dinner guests can cozy up to the bar and lounge areas in the comfort of low-profile couches or be seated in the main dining space indulging in Chicken Fried Short Ribs with smoked gravy pipette, Deviled Eggs with crispy bacon and cayenne pepper or a southern classic, Shrimp & Grits. Chef Tune will also be adding new flavors to his famed gourmet burger menu.
